Do you ever have breakfast for dinner? Well today Noah thought I was going to make pancakes for breakfast but I didn't, I made cereal for breakfast! The kids really don't dig on cereal too often. They like variety and I guess Noah felt like it was time for something special. So I told him I'd make him pancakes for dinner! The kids got all excited and talked about it all day! Of course they didn't want Bisquick, they wanted their VERY favorite breakfast in the whole world! That would be "round pancakes" (as the kids like to call them)or ebelskievers! For those of you who haven't tried these and don't know what I'm talking about, go to Plates and Palates, Williams-Sonoma or Sur La Table and get an ebelskiever pan! Then, go to Williams-Sonoma.com and get some recipes or ask me for one I found that I love! These pancakes are so light and have the best flavor! They are made with buttermilk, sour cream and whipped egg whites to give a light, fluffy texture inside! They are Danish if you can't tell by the name. You can fill them with jam, caramelized apples, lemon curd and mascarpone cheese, or just sprinkle with powdered sugar and drizzle with syrup! Last night I made maple whipped cream to go with them! We DID have dinner, by the way, and THEN our pancakes for dessert but I think that was just for the sake of Kelly and I. The kids would have been just fine having only pancakes for dinner. What kid wouldn't?

I love your "ebelskiever" photo Heather. I've been working on a cookbook for my mom and it's harder than I thought to get a good photo of food! By the way ... I used to own an "ebelskiever" pan. I think I finally gave it to the DI. That's way too much work for me! But I have to say too, that my boys grew up having breakfast for dinner ..... sourdough pancakes!

I want the recipe too. I saw this pan in the Williams-Sonoma catalog and was tempted to buy it after the kids told me they had round ball pancakes at your house the last time they were there and that they were really good. I like the lemon curd idea. Your picture looks so yummy!!!!!!

Okay, I went to "For Your Kitchen" and bought a pan for only $22--cheaper than Williams-Sonoma and it's cast iron too. I can't wait to make these for breakfast Sunday before conference!
