peach kuchen

My mom is German. She only made a handful of German recipes in all my life but the ones she did make were really GOOD! One family favorite (and Kelly's favorite) is perfect for a summertime brunch or just something sweet and fresh to snack on during the day. There are different variations of this fruit "cake" but I love the simplicity and soft texture of this one. The peaches are placed in rows and sprinkled with cinnamon and sugar. You can do a crumb topping as well but it is good without it too-and less fat! The other day we had bought peaches at Costco and they were ready to eat that day! I had to use them fast so I made a pan of Peach Kuchen with whipped cream on the side and me and the kids ate 1/2 the pan in one sitting! It is summer in every bite!

3/4 C soft butter

3/4 C sugar

5 eggs

3/4 t vanilla

1 1/2 C flour

4-5 large ripe peaches

Cinnamon and sugar

Cream butter and sugar. Beat in eggs one at a time. Stir in vanilla and flour. Spread in 9x13 greased and floured pan. Lay rows of sliced peaches (or Apples are good too). Sprinkle with 1/2 C sugar to 1/2 t cinnamon. Bake 375 for 30 minutes or until golden. Best served warm with whipped cream.

KUCHEN!!! It's so easy to eat half the pan MYSELF, let alone with the kids. Peach is my favorite flavor too, although apricot comes close. Come to think of it, I think all the flavors we've made are my favorite!! Plum and apple rock too. Okay, now I want to make some.

I vote plum from my tree!! I made several last year. They are red plums, not the purple prunes (but that's good too!) And I really like apricot and apple! All I need is one more treat to think of, then crave!!!!
